I thought I had tried all the best sake until I tasted this. Game changing. This is probably the softest and most elegant sake I have ever tried. The fermented rice is put into cheesecloth-like holders and what drips through the cloth is the finished product. A Junmai Daiginjo, or highest level of polish using very special rice make this a sake lovers pinnacle of perfection.
